BUCKWHEAT FLOUR

A light flour.  White enough it can be cooked with alone (straight),  but still a few black hull specks to give it a traditional buckwheat taste.

Our certified organic buckwheat this year flowered during the hottest and driest part of the year here.  Buckwheat is very finicky during this stage,  and in our case was a total crop failure.  The buckwheat flour listed is from buckwheat grown using organic practices on ground that is in a three year transition to certified organic production (transitional organic).
